I tried Madhuram's vegan pear cake with some mild changes comparing her recipe. The cake came out very well. The recipe is very simple.
Ingredients
Pear 4 cups
Brown sugar 1 1/2 cups
Raisins 1 or 2 cups [I added 1 cup]
Ground cinnamon 1 tea spoon
Walnuts 1 cup
Butter 6 table spoons
Green tea/Apple Juice 2 cups [I used Green Tea]
Salt 1 tea spoon
Whole wheat flour/All purpose flour 3 cups
Baking soda 2 tea spoon
Method
In a sauce pan add cut pear with it's skin, brown sugar, raisins, walnuts, butter,Green tea, ground cinnamon, salt and boil for 5 minutes and turn off the stove.
Let it cool for some time.
Then, add flour and baking soda and mix well.
Preheat the oven at 350 degrees
Transfer the contents into a baking dish or muffin tray.
Bake for 35-45 minutes until it is done.[To check if it is done: Insert a knife and it should not stick]
Let it cool for 10-15 minutes before taking out from the tray.
Pear cake is ready to eat.
Notes: You can use Apple instead of pear. Walnuts are optional
