Today i felt lazy to cut vegetables and just wanted to do something really quick.Here goes the recipe for Keerai Kootu.
1 cup Keerai (Spinach)
1 cup curd/Butter milk
1 Table spoon Coconut
1 tea spoon Jeera
1-2 Green chili
salt to taste
1 tea spoon Mustard seeds
1 tea spoon Urad dhal
In a pressure cooker add the spinach and salt and let it cook up to one whistle.
Grind the coconut,jeera,green chili into a smooth paste
After the spinach is cooked, add the ground paste, buttermilk and mix well.
Boil it for couple of minutes.
In a drop of oil add mustard seeds,curry leaves and urad dhal and allow it to splutter.
Mix it well with Kootu and Keerai kootu is ready to eat.
Serve hot with Rice or Roti.
