My friend shared this recipe with me few months back and i tried it out recently. The outcome was really delicious and fluffy. Texture was very nice. All the kids will love it.
This Souffle can be made with any fruit. I tried with Mango. Today is the third day of Blogging Marathon under the topic Holiday dishes. Mango Souffle fits totally into Holiday dishes for kids.
It is fast, easy and simple to make.



Here goes the recipe:

Ingredients

1 cup Mango pulp chilled
1 tea spoon Agar Agar (Increase the amount based on how thick you need)
1/2 cup Fresh cream sweetened and whipped
Mango pieces for decoration
1 table spoon Condensed milk (Optional)
Little water

Method

Boil the Mango pulp, water and Agar agar, Once boiled cool it on the Ice water till thick.
Mix condensed milk with the cream and fold it with the mango mixture. Do not mix too hard.
Set it in a souffle cups and refrigerate for couple of hours until it sets. Decorate it fresh cream and mango pieces.
Variations: Use any other fruits like Strawberry or any berries instead of Mango.

Today is the 2nd day of the Blogging Marathon with a theme Holiday Dishes. Couple of days back My son and i decided to make Banana Bread with couple of mushy banana we had in the house. He has watched the making of banana bread in some cartoon and advised me saying the shape i have made is a cake and not a bread :-). He was totally right. I did not have any other pan and hence the round shape. This is the easiest baking recipe that i have done till now. Thoroughly enjoyed making them.

This time i tried making with half Coconut flour and half whole wheat flour. It turned out really yummy. Everyone relished the bread. Coconut flour gives an amazing texture to the bread.


Here goes the recipe for the bread

Vegan Eggless Banana Bread
Ingredients

2 over ripe banana
1/2 cup Whole wheat flour
1/2 cup Coconut Flour
1/4 cup Oil
1/2 cup Maple syrup/ organic brownsSugar
1 tea spoon Vanilla extract
A pinch of Cinnamon Powder
1/4 cup Chopped walnuts
Little Cacao chips
1 tea spoon Baking powder
1/2 tea spoon Baking Soda
A pinch of salt



Method

Preheat the oven to 375 Degree Fahrenheit
Grease the pan and keep them aside.
In a bowl add the two banana and mash well.
Add all the above ingredients (Whole wheat flour,Coconut flour,Oil,Sugar,vanilla extract,Baking powder,Baking Soda , Cinnamon powder and Salt) except the Walnuts and Cacao chips and mix well.
Finally add the Walnuts and Cacao chips and fold it in the batter.
Batter should be thick in consistency.
Pour it in the baking pan and bake in the oven for approx 20-25minutes or till a toothpick inserted comes out clean.
Slice it once it cools down and serve.

Notes
Coconut flour can be substituted with Whole wheat flour totally or vice versa
Any oil can be used (Coconut oil, olive oil, Sun flower oil)

Today we are starting the 65th Blogging Marathon and i am very happy to pick the Holiday Dishes as the theme for this week.
Ice cream has been a favorite for most of the kids and even us. In my childhood we used to go the beach in Chennai every Friday and have a choco-bar and then come back. My son also is starting to like ice cream, That made me think to buy a ice cream maker at home. I bought the Cuisinart Ice cream maker. We all love the home made ice cream since then.
I try to experiment many flavors in home with mainly fruit based. Since we make it in the home, I avoid adding sugar and substitute it with Maple syrup. None of us could find any difference in taste. I will not mind giving another extra scoop for kids too since the ingredients are limited.



This time i tried Vanilla Chocolate Almond flavored ice cream.
Here goes the recipe

Ingredients
1 Cup Milk
3/4 cup Maple syrup
2 cups Heavy cream
1 whole Vanilla bean or (1 table spoon pure Vanilla extract)
1/4 cup chopped cacao chips
1/4 cup chopped/Silvered Almonds
pinch of salt

Method:
In a bowl mix all the ingredients except the cacao chips and nuts and combine well. Refrigerate for couple of hours.
Turn on the ice cream maker and pour the mixture into the frozen freezer bowl, add the nuts and the cacao chips into the bowl.
Let it mix until it thickens for about 20 minutes.
The ice cream will have a soft, fluffy and creamy texture. It can be served right away.
If you want it to be more firm, transfer the contents to a bowl and freeze it for couple of hours and serve.


PS
Maple syrup can be substituted with sugar
cacao chip can be substituted with choco chip.
Nuts can be avaoided based on your taste.

I am back to Blogging Marathon conducted by Srivalli after a long time and missed being in those series till now. I am happy to be back and enjoyed making theme based dishes again.
This time i chose Whole wheat dishes for the first week of the Marathon.

These Sugar cookies and are easy to bake and takes very less time. Kids will love to do it.
Ingredients are all healthy.
These cookies are perfect for icing them and mainly to shape them any shape needed.
My son enjoyed making these and shaping the cookies with the cookie cutter shapes. He hand his friends enjoyed icing them too.

Lets move on to the recipe,
                                             

EGGLESS WHOLEWHEAT SUGAR COOKIES
Recipe Source:  The Novice Housewife
makes about 20-24 cookies

INGREDIENTS:
1 1/2 cup Whole wheat pastry flour
3 table spoon milk
2 tea spoon Baking powder
A pinch of salt
1 tea spoon vanilla essence
1/2 cup Unsalted Butter
1/2 cup Sugar (I used Organic light brown sugar)

METHOD:
Preheat the oven to 350 degree F.
In a bowl mix all the dry ingredients together (Flour,Baking powder,salt)
Cream the butter and sugar well until light and fluffy.
Mix the Milk and vanilla essence with the sugar.
Now mix the dry with the wet ingredients and form a dough. (Do not over mix it)
Roll the dough flat medium thick and shape out the desired shapes and place it in the baking tray.
Bake about 8-10 minutes and let it cool completely.
Either serve with icing or without icing them.

 After baking these tasted really yummy and crisp.

Last day of BM #15 and here goes the recipe for Dry Fruit Ladoo. This is simple and quick to make.
5 Figs/Dates (I used figs)
1/2 cup chopped dry fruit and nuts (Almonds, pistachio, Cashews, Walnuts, Raisins)
2 table spoon powdered sugar
2 table spoon water
1 table spoon ghee

Grind the figs/dates coarsely. In another pan add 1 table spoon ghee, roast the other fruit and nuts and keep aside.
In a pan add the figs and little water and keep stirring until it starts to melt  a little bit and becomes gooey texture. Then add sugar and continue stirring for 2 minutes and then add the roasted fruit and nuts and mix well. switch off the stove and roll them balls when they are warm.

Note:
This ladoo is very healthy and can be done any dry fruits of your choice.
Condensed milk can also be added instead of sugar. It will give a richer taste.

Today for the Blogging Marathon, i decided to do eggless peach jam cookies. I had bookmarked Rak's kitchen recipe for a long time. I wanted to give it a try. The recipe looks simple and easy to make.


All purpose flour- 3/4 cup
Vanilla custard powder- 3/4 cup
Corn flour- 4 table spoon
Butter 1/2 cup
Powdered sugar- 1/2 cup
Curd- 3 table spoon
Vannila essence- 1 tea spoon
I used peach jam- 2 table spoon

Method
1. Soften the butter. Add vanilla essence and sugar and beat it until frothy.
2.Add flour and curd and form a dough.
3.Spread it in the surface and cut it in your desried shapes. This biscuits won't rise much. So you can decide on what thickness you want.
4.Place the cookies in a baking tray and press the center and form a dent.
5. Fill little jam over the biscuits inside the dent.
6.preheat oven at 350 F and bake the biscuits for 10-15 minutes.
7. Store them in a air tight container.

Just remember that these biscuits harden little more after taking out from the oven.

Who will not like Banana with milk? This is usually called 'Paal um Pazhamum' in tamil. It is very common one given to the bride and the groom by the elders during the marriage rituals. It used to taste yumm.
But, that is made just with plain milk and banana. This is also a perfect food for babies. My son just loves it.
For a twist, instead of plain milk. I made with homemade almond milk. This version, not only my son liked it. My husband and me also loved it.
Ingredients
 For Almond milk,
1/4 cup Almonds (Badam)
2 Cups cold milk
Little honey
1 tea spoon sugar (optional)
2 Bananas

Method
Soak the almonds in water for 10-15 minutes. I used the sliced almonds with the skin.
Later grind the almonds, honey and sugar to a smooth paste with a little milk. Mix in the remaining milk along with this.
Slice the bananas into small pieces and add into the almond milk. Serve cold.

I tried a payasam with dried figs today. It turned out pretty good. Frankly, it is the hot version of figs milk shake.
Ingredients
4-5 Dried figs
1 cup plain milk or coconut milk
2 spoon of sugar (optional)
1/2 tea spoon Ghee
Few cashews to garnish
                            
Method
Soak the figs in water for 1/2 hour and then grind to a smooth paste.
In a pan add the ground figs, milk and sugar and boil for 5 minutes.
In a small frying pan add the ghee and cashews and fry for a minute.
Garnish and serve hot or cold.

I had lot of banana at home which were starting to get black spots on top and none of us were consuming it. I thought instead of wasting them, i had to either make banana bread or this sweet. This sweet is much easier i felt for today. I did not want to switch on the stove or oven for making any sweet today. This is usually made and sold in temples. I just love them a lot. This is a very famous sweet in south side temples, of course they add more items to it. This is my version of it.
This is simple and can be made in 5 minutes if all the ingredients are available at home. This is also a quick sweet for neivedyams(offerings).

2 Ripened Banana
5-6 Raisins
2 table spoon powdered Jaggery or Brown sugar
1 tea spoon Ghee
1/2 tea spoon cardamom powder
2-3 Dates (optional)
few kalkand (sugar crystals)

In a bowl mash the banana. Add the brown sugar, ghee and all the other ingredients and mix well and serve.

I had some left over Payatha maav( Green Gram dhal) flour that i bought for my son, which i use to bathe him with that. I almost used it for 14 months and now i have stopped using them.I had some left over flour and decided to do this urundai (sweet). Usually in India, they say giving bath for babies with such flours is good for their skin.
Ingredients
1 cup of Green Gram dhal flour(Payathu Maav)
1 cup Powdered sugar
2 table spoon melted ghee
Little raisins and cashews

Method
Dry roast the green gram flour until the raw smell goes away and nice aroma comes out of it.Switch of the stove.
Mix the powdered sugar along with the green gram dhal powder.
In a small pan heat the ghee and add the cashews and raisins and allow it to turn mild brown and switch off the stove.
Mix the hot ghee with the mixture and mix well.
Form into small laddoos when it is warm itself. Otherwise it is difficult to form laddoos.

Today i decided to make Kalakand for Blogging Marathon, since it is a weekend and my husband will be around to take care of my little one.
I wanted to do this sweet for a long time. But only today i got a chance to make it. This week we are having fun having sweets everyday. I am sure we will have to workout extra next week :-) But it is okay once in a while i think what say??:-)
                          

I referred Manjula's recipe with just extra ghee and used half of her measurement mentioned.
4 cups of whole milk
1 1/2 spoon lemon
1/4 cup of sugar
1 tea spoon of ghee
chopped Pistachios for garnishing

                                      

Method to make paneer
Boil 2 cups of milk in a pan and once it comes to a boil add the lemon juice and stir occasionally.
The milk will start to break and curd will start to separate from the whey. Switch off the stove.
Once they are separated completely, Strain in a muslin cloth and run cold water to remove the flavor of lemon.
Method to make Kalakand
In another pan boil the remaining 2 cups of milk. Keep stirring continuously.
Add the strained paneer, sugar and keep stirring. [For me it took 20 minutes]
Keep stirring until they form a soft lump and start leaving the pan.
Transfer the contents to a greased plate.
Spread evenly in the plate and drizzle 1 tea spoon of ghee on top. Now, with a help of spoon spread evenly and make a smooth surface at top. Ghee helps to prevent sticking to the spoon and also gives a nice flavor.
Sprinkle some chopped pistachios allow it to set/cool for about 1 hour.
Cut into small pieces after it cools down and enjoy.

Vellam dosai is a simple sweet dosa made with Jaggery. I wanted to try the same with dark Brown sugar instead of jaggery and Whole wheat flour instead of All purpose flour and see how it turns. They turned out really nice and crisp. This is a perfect recipe for anyone during fasting.  I made this as an offering to God today.
                          
Here goes the recipe.
1 cup Whole wheat flour
1 cup Brown Sugar (If Jaggery ,you can use 1/2 cup)
Pinch of cardomom powder
Ghee
Approx 1- 1 1/2 cup Water

Method
In a vessel add the flour,brown sugar,cardomom powder and water and mix well.
Mix well without any lumps. This batter will have to be a little thin.
Heat the tava and spread a little ghee. Pour a laddle full of batter and spread the batter little bit to form a round shape.
Pour a little ghee on top and flip once it is cooked on one side.
Wait until it becomes crisp on both sides, if required.
And serve hot with unsalted butter.

This time for Srivalli's Blogging Marathon. I decided to take up the Quick Mithai topic for the week.All of us in our house like Gulab Jamuns that too which is made from scratch. I also got a extra credit from my husband that it was tasting perfect this time. It was fun making it too.

 Recipe Source (Manjula's Kitchen)
Ingredients
For the Jamun
1 Cup Milk powder
1/4 cup All purpose flour (Maida)
3 table spoon of unsalted room temperature butter
1/4 cup Milk
Pinch of baking soda ( I did not add this time)

For the syrup
1 1/2 cup sugar
1 1/2 cup water
Cardomom powder or Rose essence for flavor
Oil/Ghee for frying

Method

For the Syrup
In another pan add the ingredients to make the syrup and bring it to boil.
Switch off the stove once they come to boil also once the sugar dissolves completely.
Add the cardomom powder or rose essence for flavor.
For the Jamuns
In a Bowl add Flour, Baking soda and milk powder and mix well.
Add the butter and mix well. Slowly add the milk and make a thick dough.
Initially the dough will be little sticky, but after few minutes. The milk powder will absorb all the milk and will become thick and dry. If it is too dry then add little more milk.
Roll them into small balls and divide the dough to 20-25 balls.
In a heavy bottom pan, add the oil and allow the oil to become hot. (keep the stove in medium flame)
Fry the Jamuns until they turn golden brown. Work with medium flame.
Keep it aside for few minutes and then add in the syrup. (Do not add the jamuns into the syrup when they really hot. They will break apart)

This sweet i wanted to try for a long long time and finally got a chance to make it. I wanted to send some sweets to my close friends and got a nice chance to make it. Hope they will like it.

Cashew Barfi
Ingredients
1 cup Cashew powder
3/4 cup Castor sugar(Powdered sugar)
1/4 cup water

Method
Grind the cashew to fine powder.
In a kadai add the water and sugar powder and allow it boil. No need to check for string consistency.
Once you see the white bubbles at the bottom of the pan, add the cashew powder and mix well.
Keep stirring and you will see that the dough is getting thicker and will form a semi dough then switch of the stove. (The best way to check is, Drop a little in a plate and check it. It should form a soft ball).
Transfer it to a plate and allow it to cool.
Once it is cooled a little bit, Knead the dough with your hands well and it will form like a chappathi dough.
If the dough is too dry and you are not able t roll, You can add a little milk to make it soft dough.
Roll it and cut into desired shapes.[This is for Kaju kathli]

Pista barfi
1 cup unsalted pista
1/2 cup powdered sugar
less than 1/4 water

Follow the same procedure as the Cashew barfi and keep the dough aside.

For cashew-Pista Roll
Take a small ball size cashew dough and roll it a littlle bit.
Place a small ball size pista dough and cover it and cut it into half.
cashew-pista roll is ready.
Enjoy..

After a long time i am taking part in Indian cooking challenge for August hosted by Srivalli.
For a long time i wanted to try Jalebi at home. When i saw the recipe from her, It was really simple and easy to do. Hence thought of taking part this month. Here goes the recipe for the month.
Ingredients
For the Batter
1 cup All purpose flour/Maida
1/4 cup Corn starch
1 table spoon hot oil
1 tea spoon squeezed lemon/lime
1 cup curd/yogurt
Pinch of safforn/yellow color (I did not have any color, Hence used a pinch of Turmeric powder)

Method to make the batter:
In a bowl mix all the above ingredients and allow it to ferment one full night or for atleast 7-8 hours. The batter has to be really thick like pancake batter. If it is watery add some corn starch to make it thick.

For the Syrup
1 cup sugar
1/2 cup water
1/2 lemon

Method to make the syrup
Boil both sugar and water to form a light syrup consistency and then squeeze the lemon to avoid crystallization.keep the syrup warm.

oil for deep frying
I used Ketchup bottle to squeeze the batter into hot oil.

To form jalebi's
In a deep frying pan pour the oil and once the oil is hot squeeze the Jalebi's using the bottle or zip top bag with one corner snipped.
Keep the stove in low flame so that the Jalebi does not become brown too fast.
Once they turn light brown and crisp.Remove from the stove and directly drop in the Sugar syrup and leave it for couple of minutes and serve warm.

Now comes the 8th version of Blogging Marathon hosted by Srivalli. This time there were several topics and i chose 5 ingredients or less. I thought of starting with a sweet dish today.
Now the recipe,
1/2 cup Sooji (Rava)
3/4-1 cup sugar (based on your sweet tooth)
1 cup water
2 tea spoon Ghee
Cashews and Raisins
Method:
In a pan add the ghee and cashews and raisins and fry till golden brown.
Add the Sooji and fry for a minute.
Add the sugar and water and stir well. Cover and allow it to cook for few minutes. Keep stirring on and off.
Once the consistency is thick turn off the stove and serve hot.

Today is the last day of BM#6 week 1.Srivalli had paired bloggers and we had to pick a recipe from their blog and cook and post it for the last day.I was paired with Suma and i decided to do Banana dates Milkshake from her blog which will fit my theme Mini Bites for kids.
Here is the recipe, I modified a little bit by ignoring Badam mix from her ingredients.I added few nuts as an alternative and made it a Banana and nut milkshake.
1 Banana
4-5 pitted Dates
1 spoon of almonds and raisins
1 cup almond milk or plain milk (I used Almond milk)
Sugar optional-I did not use them.

Blend all the ingredients together until all the dates and nuts are pureed well.
Refrigirate for sometime before serving and it tastes better when serve chilled.

Wow it's already the 6th day of Blogging Marathon. I decided to make some Chocolate Rolls with leftover Marie Biscuits and Cocoa powder. This is a bookmarked recipe for almost more than a year from Mane Adige's. I just modified the filling inside. I used Cashew powder instead of coconut powder.
Recipe is as follows:
For the Dough
1/2 pack of Marie biscuits
1 tbl spoon Cocoa powder
1/2 cup Milk
For the Filling:
1 cup powdered Cashewnuts
3/4 Powdered sugar
2 tbl spoon Butter (Melted)
1 tsp Elachi powder

Method:
Grind the biscuits to a smooth powder and mix cocoa powder and milk. (add the milk slowly based on the thickness of the dough)
Form a thick dough.Dough should be like thick chapathi dough and keep it aside.
In a cup mix the powdered cashew,powdered sugar,elachi powder and mix well.
Mix with the melted butter to a smooth paste. It should be a sticky paste.
Pull out a lemon size dough and roll it like a thick chapathi.
Spread a spoon full of cashew paste over the chapathi.
Roll the chapathi to form a cylinder shape.
Freeze the Chapathi for 20-25 minutes and cut and serve them.

My husband and I love Milk sweets and I thought of making some at home this time with Ricotta cheese.
I tried Champa's Dhoodh peda with Ricotta Cheese. It came out so well.
It tasted really nice. The method is also very quick and easy to do. I used mostly her measurements and did not change much.
Here is the Ingredients
1 (15oz) tub of Ricotta cheese (any variety)
1 cup powdered sugar
1 cup Milk powder
1/4 cup of unsalted butter
1 tea spoon Cardomom powder
Pistachios to garnish

Method
In a pan add the butter and allow it to melt. Keep the stove in medium flame.
Add the Ricotta cheese and keep stirring until it is semi dry.
Add the powdered sugar,milk powder and keep stirring for 10-15 minutes.
Add the Cardomom powder and mix well.
Once it starts leaving the pan and forms like a dough,turn off the stove.
Transfer the contents into a plate greased with ghee.
Roll it flat and allow it to cool.
Cut into desired shapes once it cools down.

Merry Christmas and a Happy New year to all of you!!!!
I tried a Aayi's eggless fruit cake(Link is attached below) and i made few modifications to the recipe.The cake came out really soft and nice. All of you should try it..

Here is the Ingredients,
1 cup All purpose flour
1/2 cup +1/4 cup Sugar
7 table spoon Butter (unsalted)
1/2 tea spoon Cinnamon powder
1/2 tea spoon Clove powder
1/2 tea spoon Cardamom powder
3/4 cup Orange Juice (I used Apricot juice)
1 tea spoon Vanilla extract
1/2 tea spoon Baking powder
1 tea spoon Baking Soda
1/4 tea spoon salt
1/2 cup walnuts
1/2 cup Almonds
1/2 cup Raisins
1/2 cup Dried plums
You can also use tutti Fruti

Method:
  1. Preheat oven at 350F
  2. In a bowl add the butter and melt it, Add the dry fruits and nuts and mix well.
  3. Heat 1/2 cup of sugar with 1 table spoon of water and melt till it becomes dark brown,
  4. (Do not stir while making the caramel, Shake the vessel)
  5. Pour the caramel to the dry fruit mixture and mix well.
  6. Once it is cooled a bit, add juice,salt and remaining 1/4 cup sugar,vanilla extract and spice powders and mix well.
  7. Sieve the all purpose flour,baking soda and baking powder.
  8. Add the dry mixture to the fruit mixture and mix well with a spoon.
  9. Grease the baking pan and pour the batter into it.
  10. Bake in 350F for around 25-30 minutes till the knife is inserted and comes out clean.
