Green Apple in general is a very sour type of fruit. In our house no one likes to eat it as is.
But my Mother-in-law came with this invention of making Green Apple pickle just like Maanga (Mango) Kari. This gives a perfect sweet and tangy flavor. Since then i make whenever i buy this type of Apple. This Pickle can be made very fast with just a few chops and seasonings.


Here goes the recipe for Green Apple Pickle:

Ingredients
1  Green Apple
2 tea spoon oil (I used Sesame Oil)
1 tea spoon Chili Powder
1/2 tea spoon Mustard seeds
A pinch of Asafetida
1/2 Lemon
Salt to taste



Method
Chop the apple into small pieces, Squeeze the lemon and add salt.
In a small pan add the oil, mustard seeds, chili powder and asafoetida and allow it to splutter.
Mix everything together and store it in a air tight glass container.


This goes well with Curd rice, Sambhar rice or any Roti's or any south indian dish.
This usually stays fresh for 2-3 weeks.

Preserves/Jam can be made from various fruits. I made a batch of Strawberry Jam last summer and it was a hit in our house with a toast or Paratha. This year the Cherry are in season right now. They are really sweet and juicy.
This Jam which i did is sweetened with Maple syrup and flax seeds is used to thicken the jam.
Also it makes it healthy. Flax seeds contains Omega 3 and is supposed to be very healthy.


This week Blogging Marathon's theme is Pickles & Preserves.
Jam's generally contains Pectin but this recipe is so nice that it does not contain any extra ingredient in it. My son also likes this jam particularly because it does not taste too sweet like other Jam.

The recipe is very simple and it does not take too long to make it.
The more thick it is, The shelf life is longer.

Here goes the recipe for Cherry Jam/Preserve:

Ingredients: 1 1/2 cup Pitted ground Cherry
2-3 table spoon Maple syrup (Optional)
2 Table spoon ground Flax seeds powder/Chia seeds powder



Method: In a blender grind the Cherry, Flax seeds powder and maple syrup to a coarse puree.
Add the mixture in a sauce pan and simmer, uncovered for about 20-25 minutes until it reduces the mixture and also becomes thick in consistency. Once little thick. Switch off the stove.
Allow it cool and then pour it into a Bottles to preserve them.
Refrigerate once done.
This stays good for a week or so. Please use dry spoon while using the jam.

I always love doing payasam with fruits or veggies. They taste good and at the same time it is nutritious and healthy. I have had this payasam with jack fruit in Kerala. I think it is called (Chakka Pradaman or Ada Pradaman). I wanted to make the same with banana instead of jack fruit. I am sure the kids will like it. I made this and served my little one. He liked it and had couple of spoons. Usually coconut pieces are added to this kheer. I did not add them since my son has not yet started eating that hard pieces.
                                                                     

Ingredients
1 Banana
1 cup jaggery
1 tea spoon cardomom powder
1 cup milk
1 cup coconut milk
1 tea spoon ghee
1 table spoon chopped (Almonds, Walnuts, Raisins and Pistachios)

Method
In a small pan add the ghee and nuts and fry for a minute. Then keep it aside.
In a pan add the jaggery and allow it to melt and then add the banana and cardomom powder.
Keep stirring until the banana is mashed and cooked well.  The mixture will also become quite thick.
Then add milk and boil for 2 minutes. Then finally add the coconut milk and switch off the stove immediately.
Add the fried nuts and mix well.
serve hot or cold. We preferred hot more than cold.

Today for the Blogging Marathon, I wanted to pick something really simple and easy to make sweet and also wanted to consume with in a day. This sweet pachadi is usually served in marriages or any functions at home.
                          
Ingredients
1  Apple
1 Banana
1 Kiwi
1 Tomato
Little Grapes
1 cup Sugar

Method
In a pan add the sugar and a little water and allow the sugar to dissolve and form a syrup.
Add all the fruits and allow to boil for few minutes.
Allow it to cool and then serve.
In my preparation, i felt the kiwi made it too sour.

Note
You can use any fruits you feel like.
You can also add any dry fruits

Merry Christmas and a Happy New year to all of you!!!!
I tried a Aayi's eggless fruit cake(Link is attached below) and i made few modifications to the recipe.The cake came out really soft and nice. All of you should try it..

Here is the Ingredients,
1 cup All purpose flour
1/2 cup +1/4 cup Sugar
7 table spoon Butter (unsalted)
1/2 tea spoon Cinnamon powder
1/2 tea spoon Clove powder
1/2 tea spoon Cardamom powder
3/4 cup Orange Juice (I used Apricot juice)
1 tea spoon Vanilla extract
1/2 tea spoon Baking powder
1 tea spoon Baking Soda
1/4 tea spoon salt
1/2 cup walnuts
1/2 cup Almonds
1/2 cup Raisins
1/2 cup Dried plums
You can also use tutti Fruti

Method:
  1. Preheat oven at 350F
  2. In a bowl add the butter and melt it, Add the dry fruits and nuts and mix well.
  3. Heat 1/2 cup of sugar with 1 table spoon of water and melt till it becomes dark brown,
  4. (Do not stir while making the caramel, Shake the vessel)
  5. Pour the caramel to the dry fruit mixture and mix well.
  6. Once it is cooled a bit, add juice,salt and remaining 1/4 cup sugar,vanilla extract and spice powders and mix well.
  7. Sieve the all purpose flour,baking soda and baking powder.
  8. Add the dry mixture to the fruit mixture and mix well with a spoon.
  9. Grease the baking pan and pour the batter into it.
  10. Bake in 350F for around 25-30 minutes till the knife is inserted and comes out clean.
