We had variety rice for dinner and did not have any chips in hand to eat with it.
I then thought of making potato chips in Microwave and see how it turns out. They were cooked with in minutes and turned out amazing. The chips was really crisp and tasted really nice.
It is one of the most simplest dish i have ever done i think. But it is  really worth a try.
Ingredients
1 Potato
Little salt to sprinkle
1 tea spoon oil

Method
Thinly slice the potato. Sprinkle some salt and spray the oil on top or just spread the oil over the potato.
Cook in a microwave plate on high for about 4-5 minutes until they are crisp and light brown in color.

Got this recipe from one of my close friend and wanted to try for a long time. The recipe turned out too good.Thank you very much for the recipe S.
It is really fast and easy to do this dish. There is no fermentation required for this dish.
Ingredients
4 cups Raw rice
1 cup Urad dhal

To Temper
1 tea spoon oil
1 tea spoon Mustard seeds
1 tea spoon urad dhal
2-3 Green chillies
Few curry leaves
1 Chopped Onion
Salt to taste.

Method
Soak the rice and dhal for 1-2 hours
Grind the Rice, dhal and salt to a semi thick batter like Idli or Dosa batter. [I used Mixie to grind, You can grind in Grinder also]. You can add water if the batter is too thick to pour.
No need t ferment the batter You can make paniyaram right away after grinding.
In a small pan, add oil,and all other ingredients to temper and mix in the batter.
Heat the Appam/Paniyaram pan and add a drop of oil in each hole.
Pour one laddle full of batter and allow to cook for few minutes and turn the side and once it turns little brownish color, you can take it out.
Beautiful salted paniyaram is ready.

Second day of blogging marathon and i made Bread Bonda for the theme Mini Bites.
This is yet another simple recipe and kid friendly.
Here is the recipe for the same,
2 cups of Bread crumbs
1/2 cup Rava/sooji
1 Green chillies chopped
1 Onions chopped
1 tea spoon Asafeotida
Corainder leaves chopped
salt to taste
water little bit
Oil to fry

Method:
Grind the bread to make it into crumbs, or you can use store bought bread crumbs.I had some bread at home which was nearing to end date. So thought of consuming it fast.
Add the rava, salt, chillies, asafeotida, coriander leaves and mix well.
Sprinkle some water and make a dough. Don't add too much water since bread absorbs lot of water.
Make into small round shapes and fry it in oil until golden brown.
Keep the stove in low flame since it has to cook well inside.
Serve hot with Ketchup or any sauce.

This snack does not take too long to do.

This is 6th Blogging Marathon run by Srivalli. This time i chose the theme 'Seven days of Mini Bites'. My recipe(Monaco Mini bites) for the first day is too too simple and easy to make if everything is at home.
Can there be a more simple recipe than this? Kids will just love them for sure. This can be had in a single bite.
Now, here goes the recipe,

Ingredients
10 Monaco salt biscuits
1 Tomato (little hard one's)
1 Slice of cheese
1/2 cup of Cilantro chutney or Basil pesto
1/4 cup of channa masala (I used them since i had some leftover's)

To assemble,
Place the Monaco salt biscuits flat on a plate.
For the first one,Spread little Chutney/pesto and keep the Tomato and cheese on top. (I made some Basil pesto)
For the next one, On top of Biscuits, spread a little channa masala.
Like this you can choose whatever combo you want to spread the toppings with.
We can keep any toppings as we like. I used the one's above.
Other toppings suggestions are,
Onions, Tomato chutney and bell peppers.
Just plain cheese- Kids will love them.

To make the Basil pesto:
1 cup Basil leaves
1/2 cup pine nuts or walnuts
1/4 cup olive oil
1 lemon
salt to taste

Grind all the ingredients above to a smooth paste and pesto is ready. It really tastes awesome with lot of other dishes like Pizza, pasta.

This is a dish for Indian Cooking Challenge, an on going event hosted by Srivalli.
This month's challenge was do Khaman dhokla with the recipe given by her and we had to follow and finally post our outcome and experiences.
From my experience doing this Khaman Dhokla, It came out pretty well but not as expected.
I think i added some baking soda or may be some Eno salt more, where it rised well and tasted very well. It did not come out in proper pieces for me. But actually it tasted very nice. Otherwise it was very spongy and nice flavor. It is fun participating in this challenge.

I shall post my snap soon today in the evening. I have some problem loading photos into my computer from my camera.

If you want to participate in this challenge, Please do send a mail to Srivalli.

Recipe given by Srivalli is as follows:
For Batter:
Bengal Gram flour / Besan - 250 gms (1 & 1/2 cup)
Curd - 1/2 cup (not very sour)
Water - 1/2 cup
Cooking Soda - 1/2 tsp

For seasoning to be mixed to the batter (to be added just before cooking)
Oil - 1 tbsp
Turmeric a pinch
G. Chili paste - 1 - 2 long (as per taste)
Sugar - 1 tsp
Citric acid - quarter tsp

Eno - 1 packet (green colour fruit lime) + sprinkle or dust few bits on the plate

For tempering
Sesame seeds
Mustard Seeds
Curry leaves
Grated coconut
Coriander leaves

Little water + Oil to be topped on dhoklas

Method to prepare:

Mix first 1/2 cup curds with 1/2 water. To this add the besan and mix well to get a lump less batter, the consistency should be of idli batter, more of dropping not pouring consistency. Slowly add more water if needed else, add the soda. Keep it aside to rise for 1 hour.

If you are using a pressure cooker, fill the pan with water, place a plate over which you will have use a plate for steaming the dhoklas. Thali plate can be used for steaming

To the batter mix in the citric acid, oil, salt, sugar, green chili paste and turmeric powder. Mix well. This has to be done just before pouring to the plate.

Meanwhile have the pan on stove, and let the water start boiling. When the water reaches the rolling stage, you can mix the eno to the batter (Save little of eno for dusting on the plate), mix gently, you will see bubbles coming out.

Dust or sprinkle the plate with eno. Then immediately pour the batter to the plate. Place the plate carefully inside the pressure pan and cover with lid. You need not use the whistle. After covering you will find steam coming out of the outlet, simmer and don't disturb for almost 5 -7 minutes.

After 5 -7 minutes, remove the lid and proof it using toothpick or knife. If the knife comes out clean and does not have any batter sticking, then its done. Cover back and let it remain on flame for 1 min and switch off the gas and allow it for 5 minutes.

In a bowl, mix 3 tsp of water along with a tsp of oil
Remove the plate from the pan, pour the water and oil mix over the top.

For seasoning, heat a pan with oil, add curry leaves, sesame seeds, mustard seeds and finely chopped green chilies. When mustard starts popping, remove and pour over the dhokla

The batter should be filled to only 1/2 as it will rise up. After adding eno the batter should not rest. Amount of sugar can be increased on preference.

If you want perfect shaped ones and not the crumbling, cut and handle gently

Dhokla can also be steamed in kadai filled with water and a plated titled over it.

Also try out my other version of Instant Dhokla which is very easy and quick to make.
